Description:

Pullulan is an extracellular water-soluble viscous polysaccharide, similar to glucan and xanthan gum, produced by the fermentation of Aureobasidium pullulans. It was discovered as a unique microbial polysaccharide in 1938.

Pullulan aqueous solution has a smooth and refreshing texture, which helps improve mouthfeel, making it suitable as a food quality improver and thickener. Adding a small amount of pullulan during food processing can significantly enhance food quality. For example:

1. In pastries, the addition of pullulan not only aids in shaping but also enhances flavor. It is also used as an adhesive for peanuts, nuts, almonds, melon seeds, and dried fruits, ensuring firm adhesion without easy detachment.

2. In premium tofu, pullulan, combined with bittern and glucono delta-lactone, helps maintain surface gloss and soybean aroma, simplifies the process, and improves tofu quality.

3. When making fish cakes, adding 0.1% pullulan enhances flavor, improves quality, strengthens texture, and helps maintain shape.

4. Esters formed from pullulan and higher fatty acids exhibit better emulsifying properties than sucrose fatty acid esters and starch fatty acid esters. They can be used as emulsifiers to stabilize fats, improving smoothness, flavor, and mouthfeel in ice cream production.


5. In chocolate processing, the use of pullulan ensures good molding, glossy and smooth surface, and excellent taste and flavor.

6. In juice beverages, pullulan moderately enhances richness, smoothness, dispersibility, and stability.

7. In high-salt foods, pullulan acts as a thickener, improving the viscosity and gloss of soy sauce, condiments, stewed foods, and pickled vegetables. It also enhances smoothness and prevents syneresis.

8. Using pullulan-based bags to package fried foods and high-fat foods can prevent deterioration, insect infestation, and maintain freshness. Coating ham, sausages, and frozen foods with pullulan or its derivatives to form a film, or using pullulan film bags for packaging, can preserve freshness and extend shelf life by 4-5 times.

9. Using pullulan as a microcapsule wall material for encapsulating seasonings and condiments helps preserve freshness and flavor.

10. During the heating process of grains, noodles, and dough pieces, they tend to stick together or adhere to container walls. Adding 0.01%–1% pullulan before processing effectively resolves these issues, providing better conditions for fermentation, aeration, and drying. It prevents adhesion during heating and increases fluffiness.

11. Leveraging its film-forming properties, pullulan can be used as a decorative coating for baked goods to prevent cracking, maintain shape, and enhance surface gloss.

12. Pullulan-treated baked minced fish products effectively retain their shape, improve adhesion and water retention, and can be dried to produce crispy or semi-dried fast-food meat products.

13. In chewing gum processing, adding 1%–4% pullulan improves mouthfeel, extends chewing time, and preserves flavor. In sugar-free chewing gum, adding 4% pullulan increases elasticity and strength, prevents cracking, enhances chewiness, preserves flavor, improves mouthfeel, and extends shelf life.
